A Kat Class Favorite: No-Bake Oatmeal Peanut Butter Cups!

Our very own Kathryn Carr delights her monthly after-class gatherings with a crowd-favorite treat: No-Bake Oatmeal Peanut Butter Cups! 

These wholesome, easy-to-make treats are the perfect blend of peanut butter, chocolate, and oats. Try them out and enjoy a delicious snack that complements your wellness journey!

Ingredients:

  • 1 cup unsweetened peanut butter

  • ¼ cup pure maple syrup

  • ½ tsp vanilla extract

  • 1¼ cups quick-cooking oats

  • Pinch of sea salt

  • 1 cup chocolate chips

  • 1 tbsp coconut oil

  • Flaky sea salt for topping

Directions:

  1. Mix peanut butter, maple syrup, and vanilla in a bowl. Stir in oats and sea salt.

  2. Press the mixture into a muffin tin lined with parchment or silicone cups.

  3. Melt chocolate chips with coconut oil, then pour over each cup.

  4. Sprinkle with flaky sea salt and freeze for about an hour.

  5. Enjoy straight from the freezer or let them soften for a few minutes before serving.
